Discovered these quinoa tacos from Del Frisco’s today and I wanted to quickly share this neat find because they’re a good vegetarian option (with cheese) and they’re a good vegan option if you simply ask for them to be served without the cheese.
I also wanted to share them because they’re something you could easily replicate at home. Simply whip up some quinoa, roasted corn (you could use the Trader Joe’s frozen roasted corn) and throw it all on top of lettuce leaves with some guac and salsa and you have yourself some homemade quinoa tacos 🙂
BTW – I love the Pereg Natural Foods quinoa because not only is it tasty but you can also make it in the microwave in less than 20 minutes and it turns out just as fluffy as if you made it on your stovetop. They also have tons of different flavors.
